“Start your brisket early, try to finish it 3 hours before you want to serve it, let it rest in a room temp cooler till your ready...this gives you margin! You can’t speed up a brisket if you’re running behind. Remember to plan games for the kids! Watermelon eating contest, tug of war, and egg toss are always a crowd fave.
